If using dried apricots, chop them into small bite-sized pieces. If using fresh apricots, wash, pit, and chop them into small pieces.
In a small saucepan over medium heat, add the chopped apricots and 1/4 cup of water. Bring to a simmer, stirring occasionally.
Add 1 tablespoon of honey to the saucepan with the apricots and stir until the honey is dissolved and the apricots are softened, about 5-7 minutes. Remove from heat and let cool slightly.
In a bowl, combine the plain Greek yogurt with a pinch of cinnamon. Stir until the cinnamon is evenly distributed.
In serving glasses or bowls, layer the yogurt mixture at the bottom, followed by a layer of the apricot compote, and then a layer of granola. Repeat the layers until the ingredients are used up, finishing with a layer of granola on top.
