Preheat your oven to 200°C (390°F).
In a bowl, mix 1 cup of fresh breadcrumbs with 2 tbsp of chopped parsley, 1 tsp lemon zest, 1 tbsp olive oil, salt, and pepper to taste.
Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Press the breadcrumb mixture over the top of each fillet to form an even crust.
Bake the salmon in the preheated oven for about 12-15 minutes, or until the crust is golden brown and the salmon is cooked through.
While the salmon is baking, peel and chop the potatoes into even chunks. Add them to a large pot of boiling salted water and cook until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add 60 ml milk, 2 tbsp butter, and 2 minced cloves of garlic. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
Trim the ends of the green beans. Steam them in a steamer basket over boiling water for about 5-7 minutes, or until tender-crisp.
Serve the herb-crusted salmon with garlic mashed potatoes and steamed green beans on the side. Garnish with extra parsley if desired.
