Preheat the oven to 200°C (400°F).
In a small bowl, combine the fresh breadcrumbs, chopped parsley, lemon zest, and a pinch of salt and pepper. Mix well.
Brush the salmon fillets with olive oil and season them with salt and pepper. Press the breadcrumb mixture onto the top of each fillet.
Place the salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-18 minutes, or until the crust is golden and the salmon is cooked through.
While the salmon is baking, peel and cube the potatoes. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 12-15 minutes.
In a small saucepan, heat the milk with the minced garlic until warm.
Drain the potatoes and return them to the pot. Add the warm milk, butter, and a pinch of salt and pepper. Mash until smooth and creamy.
Trim the ends of the green beans. In a large pot or steamer, bring some water to boil. Steam the green beans for 4-5 minutes, until tender-crisp.
Serve the herb-crusted salmon with garlic mashed potatoes and steamed green beans on the side. Enjoy your meal!
