Preheat your oven to 200°C (392°F). Line a baking sheet with parchment paper.
In a bowl, combine 1 cup fresh breadcrumbs, 2 tbsp chopped parsley, 1 tbsp lemon zest, 1 tbsp olive oil, 0.5 tsp salt, and 0.5 tsp pepper to make the herb crust.
Place the salmon fillets on the prepared baking sheet, skin-side down. Press the breadcrumb mixture onto the top of each fillet to form a crust.
Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the crust is golden brown.
Meanwhile, peel and chop the potatoes. Add them to a pot of salted water, bring to a boil, then simmer until tender (about 15-20 minutes).
While the potatoes are cooking, mince the garlic and add to a small saucepan with 2 tbsp butter over low heat. Cook until the garlic is golden and fragrant.
Drain the cooked potatoes and return them to the pot. Add the garlic butter and milk, then mash until smooth. Season with salt and pepper to taste.
For the green beans, bring a separate pot of water to a boil. Add the beans and cook for about 5 minutes until just tender. Drain and season with salt and pepper.
Serve the salmon with a side of garlic mashed potatoes and steamed green beans. Enjoy your meal!
