In a medium bowl, crack the eggs and add salt and pepper. Whisk them until they are well combined.
Heat a large non-stick skillet over medium heat and add the oil. Pour in the eggs and cook, stirring frequently, until they are scrambled and just set. Remove from the skillet and set aside.
In the same skillet, add the black beans and cook for about 2-3 minutes until heated through.
Warm the tortillas in a microwave for about 30 seconds or in a separate dry skillet for a few seconds on each side until pliable.
Line up the tortillas on a clean surface. Evenly distribute the scrambled eggs onto each tortilla.
Distribute the black beans over the eggs, then sprinkle the shredded cheese evenly over the beans.
Add a spoonful of salsa to each tortilla.
Fold in the sides of each tortilla and then roll them up tightly to form burritos.
If desired, place the burritos back on the skillet seam side down and cook for a minute on each side to toast the tortilla slightly.
