Ingredients

  • 150 g salmon fillet
  • 200 g baby potatoes
  • 150 g broccoli florets
  • 1 tbsp olive oil
  • 1 piece lemon wedge
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp mixed dried herbs

Preheat your oven to 200°C (392°F).

Wash and halve the baby potatoes. Toss them in a bowl with 1/2 tbsp olive oil, a pinch of salt, black pepper, and 1/4 tsp mixed dried herbs.

Spread the seasoned potatoes on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes or until golden and crispy, flipping halfway through.

While the potatoes are roasting, season the salmon fillet with salt, black pepper, and the remaining 1/4 tsp mixed dried herbs. Place the salmon on a small baking dish lined with parchment paper.

When the potatoes are halfway through their roasting time, place the salmon in the oven and bake for 12-15 minutes, or until it flakes easily with a fork.

Steam the broccoli florets: Bring a pot of water to boil, place broccoli in a steamer basket, cover, and steam for about 5-7 minutes until they are tender yet still vibrant green.

Once everything is cooked, plate the salmon, roasted potatoes, and steamed broccoli. Squeeze the lemon wedge over the salmon and drizzle broccoli with a remaining 1/2 tbsp olive oil.
