Preheat the oven to 400°F (200°C).
Peel and cube the sweet potatoes into 1-inch pieces. Toss them with 2 tablespoons of olive oil, salt, and pepper.
Spread the sweet potatoes on a baking sheet and roast in the preheated oven for 30-35 minutes, until they are tender and golden brown, turning once halfway through.
While the potatoes are roasting, mince the garlic cloves and rub them onto the salmon fillets. Season the salmon with salt, pepper, and a squeeze of lemon juice.
Place the seasoned salmon fillets on a separate baking sheet lined with parchment paper, and drizzle with 1 tablespoon of olive oil.
Add the salmon to the oven with the sweet potatoes for the last 12-15 minutes of cooking time, or until the salmon is cooked through and flakes easily with a fork.
In the last 10 minutes of cooking, steam the broccoli by bringing a pot of water to a boil, inserting a steaming rack, and covering. Steam the broccoli for about 5-7 minutes, until bright green and tender.
Once everything is cooked, plate the salmon with the roasted sweet potatoes and steamed broccoli. Garnish with additional lemon slices if desired.
