  • 6 tbsp Chia seeds
  • 2 cups Light coconut milk
  • 1 cup Fresh mango, diced
  • 30 g Sliced almonds
  • 1 tsp Vanilla extract
  • 2 tbsp Maple syrup (optional)

Instructions

In a mixing bowl, combine the chia seeds and light coconut milk. Stir thoroughly to ensure the seeds are evenly dispersed throughout the milk.

Add the vanilla extract and stir again. If using maple syrup for additional sweetness, add it now and mix thoroughly.

Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Place it in the refrigerator overnight, or for at least 4 hours, to allow the chia seeds to absorb the liquid and thicken.

Once the chia pudding has set, remove it from the refrigerator. Stir well before serving to ensure an even texture.

Divide the chia pudding into two serving bowls. Top each serving with half of the diced mango.

Sprinkle the sliced almonds evenly over the top of each serving.

Serve immediately, or return to the refrigerator for a cool treat. Optionally, drizzle with a little more maple syrup if desired before serving.
