Ingredients

  • 150 g ground turkey (lean)
  • 1 large egg
  • 2 tbsp almond flour
  • 2 medium zucchinis
  • 0.5 cup crushed tomatoes (no sugar added)
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 10 leaves basil
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Preheat the oven to 375°F (190°C).

In a medium bowl, combine the ground turkey, beaten egg, almond flour, minced garlic (1 clove), salt, and pepper. Mix until well combined.

Form the mixture into small meatballs, about 1 inch in diameter.

Place the meatballs on a baking sheet lined with parchment paper and bake in the preheated oven for 20 minutes, or until cooked through.

While the meatballs are baking, spiralize the zucchinis to create zoodles. Set aside.

In a large pan, heat olive oil over medium heat. Add sliced garlic (1 clove) and sauté until fragrant.

Add crushed tomatoes and basil leaves to the pan. Stir and let simmer for about 5 minutes. Season with salt and pepper to taste.

Add the zoodles to the tomato sauce in the pan and toss to coat them evenly. Cook for another 2-3 minutes until the zoodles are slightly tender.

Remove meatballs from the oven and add them to the pan with the zoodles and sauce. Stir gently to combine.

Serve the turkey meatballs hot, with zoodles and tomato-basil sauce. Garnish with additional basil leaves if desired.
