Ingredients

  • 150 g ground turkey (lean)
  • 1 large egg
  • 2 tbsp almond flour
  • 2 medium zucchinis
  • 1/2 cup crushed tomatoes (no sugar added)
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1/4 cup fresh basil leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the ground turkey, egg, almond flour, salt, and pepper. Mix until well combined.

Form the mixture into small meatballs, about 18-20 grams each, which should make about 8 meatballs.

Place the meatballs on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes until cooked through.

While the meatballs are baking, prepare the zoodles: spiralize the zucchinis to create zoodles (zucchini noodles) and set aside.

In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add the crushed tomatoes to the skillet, stirring in finely chopped basil leaves, salt, and pepper. Let the sauce simmer for about 5 minutes.

Add the zoodles to the skillet and toss them with the tomato-basil sauce. Cook for an additional 3-5 minutes until the zoodles are tender.

Once the meatballs are done, add them to the skillet and gently coat them with the sauce.

Serve the turkey meatballs over the zoodles, garnished with additional basil if desired.
