Ingredients

  • 2 cups broccoli florets
  • 1 large carrot
  • 1 large bell pepper
  • 1 cup snow peas
  • 1/2 cup cashews
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 1 tsp ginger
  • 2 cloves garlic
  • 2 stalks green onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp sesame oil

Instructions

Prepare the vegetables: chop the broccoli into bite-sized florets, slice the carrot into thin rounds, and cut the bell pepper into thin strips. Trim the ends of the snow peas.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.

Add the broccoli, carrot, and bell pepper to the skillet. Stir-fry for about 4-5 minutes until they begin to soften.

Add the snow peas to the mixture and continue stirring for another 2 minutes.

Add the soy sauce, salt, and black pepper. Stir to combine and let cook for another 2 minutes.

Meanwhile, toast the cashews in a small pan over medium heat until golden brown, about 4 minutes. Add them to the vegetable mixture.

Slice the green onions and add them along with the sesame oil to the skillet. Stir well to combine.

Serve the stir-fry hot, optionally over cooked rice or noodles if desired.
