Ingredients

  • 1/2 cup rolled oats
  • 1 cup unsweetened almond milk
  • 1 tablespoon chia seeds
  • 1/2 cup mixed berries
  • 1/2 medium banana
  • 1 tablespoon almond butter
  • 1 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

In a medium-sized bowl or jar, combine the rolled oats, unsweetened almond milk, chia seeds, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.

Add the mixed berries and sliced banana on top of the oat mixture. Do not stir them in unless you want the berries to bleed their color into the oats.

Cover the bowl or jar with a lid or plastic wrap and refrigerate it overnight or for at least 6 hours.

In the morning, stir the mixture well. The oats and chia seeds should have absorbed the almond milk, resulting in a creamy consistency.

Add a dollop of almond butter on top and drizzle with maple syrup if using.

Serve cold, garnished with additional berries or banana slices, if desired.
