In a medium-sized bowl, combine the rolled oats and chia seeds.
Add the unsweetened almond milk and stir well until everything is thoroughly mixed.
Layer the sliced banana on top of the oats mixture.
Drizzle the almond butter over the banana slices.
If using, add a teaspoon of maple syrup for extra sweetness.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 8 hours or overnight.
In the morning, stir the mixture well before serving. You can eat it cold or warm it up in the microwave for about a minute if you prefer it warm.
