  • 4 pieces eggs
  • 400 g crushed tomatoes
  • 1 piece small onion, sliced
  • 1 piece red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 40 g feta cheese, crumbled
  • 2 pieces whole‑wheat pitas
  • 2 tbsp fresh parsley, for garnish
  • 0.5 tsp salt
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.25 tsp black pepper

Instructions

Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook for about 3 minutes until it starts to translucent.

Add the diced red bell pepper and minced garlic to the skillet. Cook for another 2-3 minutes until the vegetables soften.

Stir in the crushed tomatoes, paprika, cumin, salt, and black pepper. Bring to a simmer and let it cook for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

Use a spoon to create four small wells in the tomato sauce, then crack an egg into each well.

Cover the skillet and let the eggs cook for about 5-7 minutes, or until the whites are set and the yolks are cooked to your desired level of doneness.

Sprinkle the crumbled feta cheese over the shakshuka, cover again for another minute to allow the cheese to warm through.

Garnish with fresh parsley before serving. In the meantime, warm the whole‑wheat pitas in a toaster or oven.
