Preheat your oven to 350°F (175°C).
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onion and cook until soft, about 5 minutes.
Add the diced red bell pepper and minced garlic to the skillet. Cook for another 5 minutes until the bell pepper softens.
Stir in the can of crushed tomatoes, salt, paprika, cumin, and black pepper. Bring to a simmer and let cook for 10 minutes, stirring occasionally.
Make four small wells in the tomato sauce mixture and crack an egg into each well.
Cover the skillet and let the eggs cook until the whites are set but the yolks are still runny, about 8 minutes.
Sprinkle the crumbled feta cheese over the shakshuka, cover again, and cook for an additional 2 minutes until the cheese just starts to melt.
While the shakshuka is cooking, warm the whole-wheat pitas in the oven for about 5 minutes.
Once the shakshuka is done, garnish with fresh chopped parsley.
Serve the shakshuka with warm whole-wheat pitas on the side, and enjoy!
