Prepare the falafel mix according to the package instructions. Typically, you will need to add water to the mix and allow it to sit for about 10-15 minutes or until it absorbs the water and thickens slightly.
While the falafel mixture is resting, wash the mixed greens thoroughly and set aside to drain.
In a large skillet, heat about 2 tablespoons of oil over medium heat. Once the oil is hot, take spoonfuls of the falafel mixture and shape them into patties or balls. Carefully place them in the skillet, ensuring not to overcrowd the pan.
Cook the falafel for about 3-4 minutes on each side or until they are golden brown and crispy. Once cooked, remove them from the skillet and place them on a paper towel to drain excess oil.
Warm the whole wheat wraps in a dry skillet or in the microwave for a few seconds to make them more pliable.
To assemble the wraps, lay the warm whole wheat wrap flat and add a generous portion of mixed greens in the center. Top with 3-4 pieces of falafel and drizzle about 2 tablespoons of tahini sauce on top.
Fold in the sides of the wrap and roll it tightly from the bottom to the top. Cut it in half if desired, and repeat with the remaining wraps and ingredients.
Serve immediately and enjoy your delicious falafel wraps!
