Total: 45 minutes
Main DishSeafoodHealthy

Ingredients

  • 510 g Salmon fillets
  • 900 g Sweet potatoes
  • 1.5 tbsp Butter
  • 3 tbsp Milk
  • 450 g Green beans
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tbsp Lemon juice

Instructions

1

Preheat the oven to 200°C (400°F).

2

Peel and cube the sweet potatoes. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 20 minutes.

3

While the sweet potatoes are cooking, season the salmon fillets with salt, pepper, and 1 teaspoon of garlic powder. Place on a baking sheet lined with parchment paper.

4

Bake the salmon in the preheated oven for 15-20 minutes, or until cooked through and the flesh flakes easily with a fork.

5

Trim the ends of the green beans. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the green beans and sauté for 5-7 minutes until tender-crisp. Season with salt and pepper to taste.

6

Once the sweet potatoes are tender, drain them and return them to the pot. Add 1.5 tablespoons of butter and 3 tablespoons of milk. Mash until smooth, then season with salt and pepper to taste.

7

Drizzle the baked salmon with fresh lemon juice before serving.

8

Serve the baked salmon alongside the mashed sweet potatoes and sautéed green beans.
