Ingredients

  • 1 cup oats
  • 1/2 cup mixed nuts
  • 1/2 cup dried fruits
  • 1/4 cup honey
  • 1/4 cup peanut butter
  • 1/8 teaspoon salt

Instructions

Place the oats in a non-stick skillet and toast over medium heat for 3-4 minutes, stirring frequently. Set aside to cool.

Roughly chop the mixed nuts and dried fruits into bite-sized pieces.

In a small saucepan over low heat, combine the honey and peanut butter. Stir continuously until the mixture is smooth and well combined, about 2-3 minutes.

In a large mixing bowl, combine the toasted oats, chopped nuts, dried fruits, and a pinch of salt. Pour the melted honey and peanut butter mixture over the top.

Mix all the ingredients thoroughly with a spatula until everything is uniformly coated.

Line an 8x8 inch baking dish with parchment paper. Transfer the mixture to the dish and press it down firmly with your hands or the back of a spatula to create an even layer.

Refrigerate for at least 30 minutes to allow the bars to set. After setting, remove from the refrigerator and slice into 8 bars.
