Ingredients

  • 1 whole zucchini
  • 1 whole red pepper
  • 4 slices whole grain bread or ciabatta
  • 4 oz fresh mozzarella
  • 2 tbsp pesto or balsamic glaze
  • 1 tbsp olive oil
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Preheat your grill pan or skillet over medium-high heat. Brush the zucchini slices and red pepper slices with olive oil and season with salt and pepper.

Grill the zucchini and red pepper slices for about 3-4 minutes on each side, or until they have nice grill marks and are tender. Remove from the grill and set aside.

While the vegetables are grilling, slice the fresh mozzarella into thin slices if not pre-sliced.

Lay out the slices of bread on a clean surface. Spread 1 tablespoon of pesto or balsamic glaze on one side of each slice.

On two slices of bread, layer the grilled zucchini, grilled red pepper, and fresh mozzarella slices.

Top with the remaining slices of bread, ensuring the pesto or balsamic glaze side is facing inward.

Preheat a panini press or a skillet over medium heat. If using a skillet, place a heavy pan or another skillet on top of the sandwiches to press them down.

Grill the panini for about 3-5 minutes on each side, or until the bread is golden brown and the cheese is melted. If using a panini press, this may take slightly less time.

Remove the panini from the heat, slice in half, and serve immediately while warm.
