American Grilled Turkey & Roasted Vegetable Panini with Provolone

Ingredients

  • 600 g sliced turkey breast (cooked)
  • 8 rolls ciabatta rolls or focaccia
  • 200 g provolone cheese, sliced
  • 2 pieces bell peppers, sliced and roasted
  • 1 pieces medium zucchini, sliced and roasted
  • 2 tbsp olive oil
  • 4 tbsp mustard or aioli (nut-free)
  • 200 g mixed greens for side
  • to taste - salt
  • to taste - pepper

Instructions

Preheat your panini press or grill pan over medium-high heat.

Slice the ciabatta rolls or focaccia in half horizontally.

Spread 1/2 tablespoon of mustard or aioli on the inside of each bread slice.

Layer approximately 75g of sliced turkey breast on the bottom half of each sandwich.

Evenly distribute the roasted bell peppers and zucchini slices over the turkey.

Place about 25g of sliced provolone cheese on top of the vegetables.

Cover with the top half of the ciabatta roll or focaccia.

Brush the outside of each sandwich with olive oil.

Place the sandwiches on the preheated panini press or grill pan. Grill for 5-7 minutes, or until the bread is golden brown and crispy, and the cheese is melted.

Remove the sandwiches from the press and let them cool slightly before slicing each sandwich in half.

Serve with mixed greens on the side, seasoned with a drizzle of olive oil, salt, and pepper.
