Ingredients

  • 600 g sliced turkey breast (cooked)
  • 8 rolls ciabatta rolls or focaccia
  • 200 g provolone cheese, sliced
  • 2 pieces bell peppers, sliced and roasted
  • 1 medium zucchini, sliced and roasted
  • 2 tbsp olive oil
  • 4 tbsp mustard or aioli (nut-free)
  • 200 g mixed greens

Instructions

Preheat a grill or panini press to medium-high heat.

Slice the ciabatta rolls or focaccia in half horizontally and brush the inside with olive oil.

Spread a thin layer of mustard or aioli on one side of each roll.

Layer the turkey slices evenly on the bottom half of each roll (about 75g per sandwich).

Place the roasted bell peppers and zucchini slices over the turkey.

Add slices of provolone cheese on top of vegetables.

Season with salt and pepper to taste.

Close the sandwich with the top half of the roll.

Place the sandwiches on the grill or in the panini press. Close the lid and cook until the cheese is melted and the bread is golden brown, about 5-7 minutes.

Remove from the grill, let cool slightly, then cut each sandwich in half.

Serve with a side of mixed greens, lightly drizzled with olive oil and seasoned with salt and pepper.
