Ingredients

  • 4 pieces Corn Tortillas
  • 4 pieces Sunny-side-up Eggs
  • 1 cup Black Beans
  • 1 medium Avocado
  • 1/2 cup Salsa Verde
  • 1/4 cup Feta Cheese

Instructions

Heat a non-stick skillet over medium heat. Once hot, add the corn tortillas, one at a time, and warm for about 30 seconds on each side until they are soft and slightly charred. Set aside on a plate.

In the same skillet, crack the eggs one at a time and cook sunny-side up until the whites are set but the yolks are still runny, about 2-3 minutes. You may need to cover the skillet with a lid for a minute to help the whites set.

While the eggs are cooking, drain and rinse the black beans if using canned beans. In a small saucepan, heat the black beans over medium heat until warmed through, about 5 minutes. Season with salt and pepper to taste.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt and pepper.

To assemble, place one warm tortilla on a plate. Spoon some of the black beans over the tortilla, followed by a sunny-side-up egg. Top with salsa verde and optional crumbled feta cheese. Add a dollop of mashed avocado on the side.

Repeat for the remaining tortillas and ingredients. Serve immediately, garnished with extra salsa verde if desired.
