Ingredients

  • 2 pieces Corn tortillas
  • 2 pieces Eggs
  • 1/3 cup Black beans
  • 3 tbsp Salsa
  • 1/4 whole Avocado
  • 1/4 cup Cilantro
  • 2 tsp Olive oil
  • 1/4 tsp Salt
  • 1/8 tsp Pepper

Instructions

Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the corn tortillas, one at a time, cooking until they are golden and slightly crispy, about 1-2 minutes per side. Remove and set aside.

In the same skillet, add another teaspoon of olive oil. Crack the eggs into the pan and fry them sunny-side up to your desired doneness. Season with a pinch of salt and pepper. Remove and set aside.

Warm the black beans in a small saucepan over low heat, stirring occasionally until heated through. Add a pinch of salt if desired.

Place the crispy tortillas on a serving plate. Spread the warm black beans evenly over each tortilla.

Top each tortilla with a sunny-side-up egg.

Spoon salsa over the eggs and sprinkle with chopped cilantro.

Slice the avocado into thin pieces and arrange on top of or beside the Huevos Rancheros for added creaminess.
