Peel and chop the carrots into small pieces. Dice the onions, mince the garlic, and chop the tomatoes and pepper.
Heat olive oil in a large pot over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.
Add the chopped carrots, tomatoes, and pepper to the pot. Cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 20 minutes, until the vegetables are tender.
Season the soup with red pepper flakes, salt, and black pepper. Adjust seasoning according to taste.
Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
Serve the soup hot, garnished with extra black pepper or a drizzle of olive oil if desired.
