Turkey Zucchini Patties with Lemon-Garlic Dip

By Maisie St.+James

Total: 25 minutes
LunchDinnerPaleoHealthy

Ingredients

  • 5 oz ground turkey
  • 1 unit small zucchini, grated
  • 1 unit egg
  • 1 unit garlic clove, minced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp mayonnaise
  • 1 tsp additional lemon juice for dip

Instructions

1

In a mixing bowl, combine the ground turkey, grated zucchini, egg, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well until all ingredients are evenly incorporated.

2

Form the mixture into small patties, about the size of a golf ball. Slightly flatten them to ensure even cooking.

3

Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties to the pan, making sure not to overcrowd them. Cook for about 3-4 minutes on each side, or until they are thoroughly cooked and golden brown.

4

While the patties are cooking, make the lemon-garlic dip by combining the mayonnaise, 1 tsp lemon juice, and a pinch of minced garlic (if desired) in a small bowl. Stir until smooth and set aside.

5

Once the patties are cooked, remove them from the skillet and let them rest on a paper towel to remove any excess oil.

6

Serve the turkey zucchini patties hot with a side of lemon-garlic dip.
