Ingredients

  • 1 piece small pizza dough or flatbread
  • 1/2 cup crushed tomatoes
  • 3 oz fresh mozzarella
  • 10 leaves fresh basil leaves
  • 1 tbsp olive oil
  • 2 cups arugula
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.

Place the pizza dough or flatbread on a baking sheet lined with parchment paper or directly on the preheated pizza stone.

Spread the crushed tomatoes evenly over the base, leaving a small border around the edges for the crust.

Tear the fresh mozzarella into small pieces and scatter them evenly over the tomatoes.

Add the fresh basil leaves on top, reserving a few for garnish after baking.

Drizzle 1/2 tablespoon of olive oil over the pizza.

Bake the pizza in the preheated oven for 10-12 minutes or until the cheese is bubbling and the crust is golden brown.

While the pizza is baking, prepare the arugula salad. In a large bowl, toss together the arugula, 1/2 tablespoon of olive oil, lemon juice, salt, and pepper.

When the pizza is done, remove it from the oven and let it cool slightly. Garnish with the reserved fresh basil leaves.

Slice the pizza and serve it alongside the arugula salad for a delicious meal.
