Press the tofu to remove excess water. Cut the tofu into cubes.
In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes. Remove tofu from skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of sesame oil. Add minced garlic and stir-fry until fragrant, about 30 seconds.
Add mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
Return the tofu to the skillet. Pour the Teriyaki sauce over the tofu and vegetables. Toss everything to coat evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
Serve the stir-fry over the cooked jasmine rice. Garnish with sesame seeds and chopped green onions.
