Thai Basil Tofu Stir-fry with Mixed Vegetables & Brown Rice

Ingredients

  • 300 g Firm tofu
  • 1.5 cups cooked Brown rice
  • 300 g Mixed vegetables (bell pepper, carrot, green beans)
  • 2 cloves Garlic
  • 1 cup Fresh Thai basil
  • 2 tbsp Soy sauce
  • 1 tbsp Lime juice
  • 1 tbsp Vegetable oil

Instructions

Press the firm tofu to remove excess moisture. Cut the tofu into cubes about 1-inch in size.

Heat 1 tbsp of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Add the tofu cubes to the skillet and sauté until they are golden brown on all sides, about 8-10 minutes. Remove tofu from the pan and set aside.

In the same skillet, add the chopped garlic and sauté for about 30 seconds until fragrant.

Add the mixed vegetables to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

Return the tofu to the skillet. Add soy sauce, lime juice, and chili (to taste). Stir to combine evenly.

Add fresh Thai basil leaves to the skillet and toss everything together until the basil wilts. Season with salt and pepper to taste.

Serve the stir-fry over the cooked brown rice, dividing evenly between two plates.
