Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, cube the chicken breast into bite-sized pieces. Season with salt and pepper.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and sauté for another 1 minute.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until a paste forms. Gradually whisk in milk, stirring constantly until the sauce thickens. Add salt and pepper to taste.
Add the shredded cheddar cheese to the sauce and stir until fully melted and smooth.
Combine drained pasta, cooked chicken, and the cheese sauce in the skillet with onions and garlic. Mix everything together over low heat until heated through.
Serve the pasta hot, garnished with optional parsley. Enjoy your meal!
