Baked Meatballs with Marinara, Penne & Garlic Bread

Ingredients

  • 400 g mixed beef/turkey for meatballs
  • 2 cups marinara sauce
  • 300 g penne pasta
  • 1 loaf baguette
  • 1/2 cup parmesan
  • 1/4 cup parsley
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Preheat your oven to 200°C (400°F).

In a mixing bowl, combine the mixed beef/turkey, breadcrumbs, egg, minced garlic (1 clove), salt, and black pepper. Mix until combined.

Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.

Bake the meatballs in the preheated oven for 20 minutes or until they are browned and cooked through.

While the meatballs are baking, cook the penne pasta in a large pot of boiling salted water according to package instructions, then drain.

In a small bowl, mix the olive oil with the remaining minced garlic (1 clove). Slice the baguette and brush each piece with the garlic oil mixture. Place on a baking sheet.

Sprinkle the sliced baguette with half of the grated parmesan and put it in the oven to bake for 10 minutes or until the bread is golden and crispy.

Once the meatballs are cooked, remove them from the oven and place them in a baking dish. Pour the marinara sauce over the meatballs.

Sprinkle the remaining parmesan over the meatballs and sauce, and bake in the oven for 10 more minutes.

Serve the baked meatballs and marinara sauce hot over a bed of penne pasta. Garnish with chopped parsley.

Serve the garlic bread on the side with an additional sprinkling of parsley if desired.
