Juicy, golden-seared chicken served over fragrant saffron-tomato rice — a Mediterranean-inspired dish that balances bright lemon, smoky paprika and a silky, aromatic rice cooked in chicken stock. Crisped chicken skin (or a caramelized sear on breasts) and a tender, separate-grain rice make each bite texturally exciting and restaurant-quality.
Measure and rinse the rice: Place 1.5 cups long-grain rice in a fine mesh sieve and rinse under cold water until the water runs clear. Rinsing removes surface starch so the grains stay separate and fluffy once cooked.
Bloom the saffron (optional): If using saffron, place a pinch in 2 tablespoons hot water and let steep 5–10 minutes. This extracts color and aroma so the rice gets that authentic golden hue without overusing saffron.
Prep the chicken: Pat 600 g boneless, skinless chicken breasts dry with paper towels. Season both sides with 1 tsp salt (from the total), 1/4 tsp pepper, smoked paprika and cumin. Dry chicken sears better; seasoning early helps flavors penetrate.
Sear the chicken: Heat 2 tbsp olive oil in a large, heavy skillet over medium-high heat until shimmering but not smoking. Add the breasts and sear 3–4 minutes per side until a deep golden crust forms. Searing creates the Maillard reaction — the flavor-packed browned surface — and partially cooks the chicken so it finishes tender in the rice step.
Remove and rest the chicken: Transfer seared breasts to a plate and tent loosely with foil. Resting prevents the meat from tightening and keeps it juicy while you build the rice base.
Sweat the aromatics: Reduce heat to medium, add 1 tbsp butter to the same skillet and melt. Add the diced onion and a pinch of salt. Cook 4–5 minutes, stirring, until translucent and just starting to brown at the edges. Sweating extracts sweetness and builds a savory base for the rice.
Toast the tomato paste and spices: Stir in 1 tbsp tomato paste, 3 minced garlic cloves, smoked paprika, cumin, and thyme. Cook for 30–45 seconds to toast the spices — this blooms essential oils and deepens flavor; the tomato paste will caramelize slightly and add richness.
Add rice and deglaze: Add the rinsed rice to the pan and stir for 1 minute so each grain is coated in fat and spices — toasting the rice slightly helps keep grains separate. Pour in 3 cups warm chicken stock, the saffron liquid (if using), 1 tbsp lemon juice, remaining salt and pepper. Stir once to distribute and scrape any browned bits (fond) from the pan — they’re concentrated flavor.
Nest the chicken and simmer: Nest the seared breasts gently into the rice, skin-side up if you used skin-on, spacing them slightly. Bring to a gentle simmer, then reduce heat to low and cover. Simmer undisturbed for 16–18 minutes, or until rice is tender and liquid is absorbed. Cooking covered lets the rice steam evenly and finish cooking through without needing frequent stirring (which would break grains).
Finish resting: Turn off heat and let the pan rest, covered, for 8–10 minutes. This final steam-rest allows the rice to finish and the chicken juices to redistribute, ensuring moist chicken and fluffy rice.
Finish flavors and plate: Remove chicken and fluff rice gently with a fork. Stir in lemon zest, remaining 1 tbsp lemon juice (if you prefer brighter acidity), and chopped parsley to lift the dish. Taste and adjust salt/pepper. Serve chicken over a bed of saffron rice and spoon any pan juices over the top for shine and extra flavor.
Optional crisp finish (restaurant touch): For a crisper exterior, after the resting step, briefly return the chicken to a hot skillet (1 minute per side) or place under a hot broiler for 1–2 minutes until edges caramelize. This re-crisps the surface without overcooking the interior.
