Cut the sub roll horizontally in half, leaving one edge attached, like a book. Gently pull out some of the bread from the interior to make a space for the fillings.
Drizzle olive oil and vinegar on both sides of the bread. Add salt and black pepper to taste.
Layer the sliced deli meats evenly across the bottom half of the bread.
Place the provolone cheese slice over the meats.
Wash the lettuce leaves and pat them dry. Place them on top of the cheese.
Slice the tomato into thin slices and arrange them over the lettuce.
Close the sandwich by folding the top half of the sub roll over the fillings. Press gently to compact the sandwich.
Wrap the sandwich tightly in parchment paper or foil, if possible. Let it sit for a few minutes to allow the flavors to meld.
Slice the sub into halves or thirds for easier handling and serve.
