Slice the sub rolls in half horizontally and lightly brush the cut sides with olive oil.
Place the rolls with the cut side up on a baking sheet and toast them in the oven or toaster oven at 350°F (175°C) for about 5 minutes until just slightly crispy.
Layer 2 slices of salami, 2 slices of ham, and 2 slices of provolone cheese on the bottom half of each roll.
Top with fresh lettuce leaves, a few slices of tomato, and sprinkle with salt and black pepper to taste.
Place the top half of the roll over the fillings and gently press down to secure.
Cut each sandwich in half diagonally and serve immediately.
