Ingredients

  • 4 medium bell peppers
  • 2 medium onions
  • 1 cup cheddar cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes. Place the hollowed peppers in a baking dish.

Finely chop the onions and garlic.

Heat olive oil in a pan over medium heat. Add the chopped onions and garlic, and sauté until onions are translucent, about 5 minutes.

Add salt and black pepper to the onion mixture, stirring to combine.

Fill each pepper with the onion mixture until about two-thirds full.

Top each filled pepper with cheddar cheese, evenly distributing it among all peppers.

Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the cheese is bubbly and golden.

Remove from the oven and let them cool slightly before serving.
