Juicy, skin-on chicken thighs flavored with bright lemon and fragrant rosemary, grilled until the skin is crisply charred and the meat stays silky. Paired with garlicky sautéed Tuscan kale and sweet, caramelized roasted shallots, this Tuscan-inspired plate balances bright citrus, herbal perfume and hearty greens for a restaurant-quality meal that’s surprisingly easy at home.
Prep and dry the chicken. Pat each thigh very dry with paper towels (this is critical for crisp skin). Trim any excess fat and score the skin lightly if the pieces are thick so the heat can render the fat evenly.
Make the lemon-rosemary marinade. In a bowl combine the juice and zest of 2 lemons, 3 tablespoons of the olive oil, the chopped rosemary, minced garlic, red pepper flakes, 1 teaspoon kosher salt and generous black pepper. Whisk to emulsify — the oil carries and blooms the rosemary and garlic flavors while the lemon provides bright acid to tenderize and flavor the meat.
Marinate the chicken. Place the thighs in a shallow dish or zip-top bag and pour half the marinade over them, reserving the other half for finishing (reserve the remaining marinade in the refrigerator). Turn to coat, cover and refrigerate for 20 minutes up to 1 hour. Note: do not marinate much longer than 2 hours — the acid from the lemon will start to 'cook' and tighten the meat if left too long.
Roast the shallots. Preheat the oven to 400°F (200°C). Toss the halved shallots with 1 tablespoon olive oil, a pinch of salt and a grind of black pepper on a baking sheet cut-side up. Roast 25–30 minutes until deep golden and caramelized at the edges. Roasting concentrates their natural sugars so they become sweet and silky — they’ll add a mellow counterpoint to the bright chicken.
Preheat grill or grill pan. About 10 minutes before the chicken comes out of its marinade, preheat a gas or charcoal grill to medium-high (about 425–450°F / 220–230°C) or heat a heavy cast-iron grill pan over medium-high heat until smoking-hot. A hot surface is essential to render the skin’s fat quickly and produce a deeply caramelized crust.
Sear the chicken skin-side down. Brush the grill grates or pan with a little oil. Place the thighs skin-side down and press lightly so the skin makes full contact. Sear 4–6 minutes without moving to render fat and get a golden-brown, blistered skin. This step creates the Maillard crust that gives the dish its savory depth.
Flip and finish. Turn the thighs over and cook another 4–6 minutes until an instant-read thermometer reads 165°F (74°C) at the thickest part. For slightly more tender dark meat you can cook to 175°F (79°C) — thighs are forgiving. Let the chicken rest 5 minutes off the heat to let juices redistribute; resting keeps the meat moist.
Warm and reduce the reserved marinade. While chicken rests, pour the reserved marinade into a small saucepan and bring to a gentle simmer for 1–2 minutes to cook the raw garlic and reduce slightly (do not boil aggressively). This gives you a bright pan-sauce to finish the chicken — the brief simmer cooks the garlic safely and concentrates the lemon-rosemary flavor.
Sauté the kale. In a large skillet over medium heat, warm the remaining 2 tablespoons of olive oil until shimmering. Add the minced garlic (if you like a little more garlic, add another clove) and sauté 20–30 seconds until fragrant — this blooms the garlic’s flavor in oil. Add the sliced kale, a good pinch of salt and toss; the salt helps the kale release water, which speeds tenderizing. Sauté 4–6 minutes until the leaves are wilted and tender but still bright green. The quick sauté keeps the kale tender with some bite.
Finish the greens with lemon and shallots. Add the roasted shallots to the kale, squeeze in the remaining lemon juice if desired, and spoon in any reduced reserved marinade. Toss gently to coat and taste for salt and pepper. The roasted shallots add sweetness and texture while the lemon brightens the whole plate.
Plate and serve. Divide the kale and shallots among 4 plates, top each with a grilled chicken thigh, and spoon any pan-sauce over the chicken. Finish with a small sprinkle of chopped fresh rosemary, a tiny drizzle of olive oil and a pinch of flaky sea salt for contrast.
