Ingredients

  • 1 cup Canned chickpeas (drained and rinsed)
  • 2 cups Baby spinach leaves
  • 1 cup Cherry tomatoes
  • 1/4 cup Red onion
  • 1/2 cup Cucumber
  • 1/4 cup Fresh parsley
  • 2 tbsp Tahini
  • 2 tbsp Fresh lemon juice
  • 1 clove Garlic
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

Rinse and drain the canned chickpeas thoroughly. Set aside.

Wash and dry the baby spinach leaves. Place them in a large salad bowl.

Halve the cherry tomatoes and add them to the bowl.

Thinly slice the red onion and add it into the bowl with the spinach and tomatoes.

Dice the cucumber and add to the salad bowl.

Chop the fresh parsley and sprinkle over the salad.

In a small bowl, whisk together tahini, fresh lemon juice, minced garlic, olive oil, salt, and black pepper until smooth and creamy.

Pour the dressing over the salad and gently toss until all ingredients are well coated.

Serve the salad immediately, or chill in the refrigerator for 10 minutes before serving.
