  • 1 cup Cooked quinoa
  • 1 can Canned chickpeas
  • 300 g Roasted vegetables (bell pepper, zucchini, red onion)
  • 100 g Baby spinach (or mixed greens)
  • 3 tbsp Tahini
  • 2 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 1 clove Garlic
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

Preheat your oven to 400°F (200°C). Drain and rinse the canned chickpeas thoroughly. Spread them out on a baking sheet and pat dry with a paper towel.

Roast the chickpeas by tossing them with a little olive oil, salt, and pepper. Place in the oven for about 20-25 minutes, shaking halfway through, until golden and crispy.

Prepare the lemon-tahini dressing: In a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, salt, and pepper until smooth and well combined. Adjust seasoning to taste.

In a large mixing bowl, combine cooked quinoa, roasted chickpeas, roasted vegetables, and baby spinach.

Pour the lemon-tahini dressing over the salad mixture and toss gently to combine, ensuring everything is coated evenly with the dressing.
