Ingredients

  • 1 cup Cooked quinoa
  • 1/2 cup Canned or cooked chickpeas
  • 1 cup Roasted vegetables (bell pepper, zucchini, red onion)
  • 1 oz Crumbled feta
  • 1 tbsp Tahini
  • 1 tbsp Lemon juice
  • 1 tsp Olive oil
  • 1/4 cup Fresh parsley or cilantro
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Instructions

In a small bowl, whisk together the tahini, lemon juice, and olive oil until smooth and well combined. Season with a pinch of salt and pepper to taste.

In a large mixing bowl, combine the cooked quinoa, canned or cooked chickpeas, and roasted vegetables. Toss everything together gently.

Pour the lemon-tahini dressing over the quinoa mixture and toss to evenly coat all the ingredients.

Add crumbled feta to the salad and gently mix it in.

Chop the fresh parsley or cilantro and sprinkle it over the salad for garnish.

Season the salad with additional salt and pepper to taste, if necessary. Serve immediately or chill in the refrigerator for 10-15 minutes before serving for a refreshing cold salad.
