Ingredients

  • 1 cup Quinoa
  • 1 15 oz can Chickpeas
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1/4 cup Red onion
  • 1/4 cup Parsley
  • 1 large Lemon
  • 3 tbsp Tahini
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2-3 tbsp Water

Instructions

Rinse the quinoa under cold water. In a medium pot, bring 2 cups of water to a boil, then add the quinoa. Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.

While the quinoa is cooking, drain and rinse the chickpeas. Set aside.

Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion and parsley. Set them aside in a large salad bowl.

In a small bowl, whisk together the juice of one lemon, tahini, olive oil, salt, and black pepper. Gradually add water, one tablespoon at a time, until the dressing reaches a smooth, pourable consistency.

Once the quinoa is cooked, fluff it with a fork and let it cool slightly.

Add the quinoa, chickpeas, cucumber, cherry tomatoes, red onion, and parsley to the salad bowl. Pour the dressing over the top and toss to combine.
