A vibrant Mediterranean-style salad that pairs tender, lemony chickpeas with caramelized roasted eggplant, zucchini and red pepper, finished with a creamy, bright tahini-garlic dressing and fresh parsley. Textures contrast—creamy tahini, yielding roasted veg, and crisp mixed greens—while layers of lemon, garlic and olive oil lift the earthy chickpeas for a satisfying, restaurant-quality main or side.
Preheat the oven to 425°F (220°C). Line a sheet pan with parchment. A hot oven encourages quick caramelization on the vegetables without over-drying them—caramelization builds sweet, savory flavor.
If your eggplant, zucchini and red pepper are not yet roasted: toss 2 cups diced eggplant, 1 cup sliced zucchini and 1 cup sliced red pepper with 1 tablespoon of olive oil, 1/2 teaspoon salt and a few grinds of black pepper. Spread in a single layer on the prepared pan and roast 20–25 minutes, turning once, until edges are browned and vegetables are tender. Roasting concentrates sugars and removes excess moisture so the vegetables hold their shape and add depth to the salad.
While the vegetables roast, warm 1 tablespoon olive oil in a medium skillet over medium heat and add the drained 2 cups chickpeas. Cook 6–8 minutes, stirring occasionally until a few chickpeas blister and pick up color—this toasting adds a nutty flavor and helps them hold up in the salad rather than becoming mushy. Season with 1/2 teaspoon kosher salt and a few grinds of black pepper toward the end of toasting.
Make the lemon-tahini dressing: in a bowl whisk together 3 tablespoons tahini, 3 tablespoons fresh lemon juice, 1 finely minced garlic clove, 1/4 teaspoon kosher salt (adjust later), and 1/2 teaspoon freshly ground black pepper. The tahini will seize and thicken when it meets the acid—this is normal. Thin it gradually with 1–2 tablespoons warm water or a tablespoon of olive oil until it reaches a creamy but pourable consistency. Taste and adjust: add a pinch of sugar or a drizzle of honey if the dressing tastes too bitter, or more lemon if it needs brightness.
In a large mixing bowl, combine the warm toasted chickpeas, roasted eggplant, zucchini and red pepper. Toss gently so the heat from the vegetables helps them absorb the dressing and flavors. Combining while warm helps the chickpeas and veg take on more dressing and meld flavors; do not overdress—reserve a little for serving.
Add 4 cups mixed greens and 1/4 cup chopped fresh parsley to the bowl. Drizzle about two-thirds of the lemon-tahini dressing over the salad and toss lightly to coat. Finish with a sprinkle of flaky salt if you have it and fresh cracked pepper. The greens provide a refreshing contrast to the roasted veg and creamy tahini; tossing gently preserves their texture.
Plate the salad on a large platter or divide between two bowls. Spoon any remaining dressing over the top, and if desired, add an extra drizzle of olive oil and a few lemon wedges on the side.
