Ingredients

  • 3/4 cup cooked lentils
  • 1 cup mixed vegetables (carrot, peas)
  • 1/2 cup mashed potato topping
  • 1/4 cup pitted olives
  • 1/2 tsp dried herbs (thyme, rosemary)
  • 1 tbsp olive oil
  • 1/4 cup chopped onions
  • 2 - garlic cloves
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add chopped onions and garlic and sauté for 2-3 minutes until onions are translucent.

Add mixed vegetables and continue to cook for another 5 minutes, stirring occasionally.

Stir in the cooked lentils, pitted olives, dried herbs, salt, and black pepper. Cook for another 3 minutes to allow the flavors to meld together.

Transfer the lentil and vegetable mixture into an individual oven-safe dish.

Spread the mashed potato topping over the lentil mixture, smoothing it out with the back of a spoon.

Place the dish on a baking sheet and bake in the preheated oven for 20-25 minutes, until the mashed potato topping is golden brown.

Remove from the oven and let it cool slightly before serving warm.
