  • 1 tsp Za'atar seasoning
  • 1 cup Root vegetables
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Preheat your oven to 425°F (220°C).

Pat the chicken thighs dry with paper towels and season them with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.

Rub the chicken thighs with olive oil and sprinkle them with the za'atar seasoning, ensuring they are evenly coated.

Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a roasting pan.

Toss the root vegetables with a pinch of salt, pepper, and any remaining olive oil. Arrange them around the chicken on the baking sheet.

Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature of the chicken should reach 165°F (75°C). The vegetables should be tender and slightly caramelized.
