Ingredients

  • 170 g Sea bass
  • 80 g Dry couscous
  • 120 g Asparagus
  • 2 tbsp Olive oil
  • 1 piece Lemon
  • 2 tbsp Mixed herbs (e.g., parsley, thyme)
  • to taste - Salt
  • to taste - Black pepper
  • 120 ml Water

Instructions

Preheat the grill to medium-high heat.

Season the sea bass fillets with salt, black pepper, and 1 tablespoon of mixed herbs. Drizzle with 1 tablespoon of olive oil and a squeeze of lemon juice.

Trim the asparagus and season with salt, black pepper, and a drizzle of olive oil.

Place the seasoned sea bass and asparagus on the grill. Cook the sea bass for about 4-5 minutes on each side or until it is cooked through and the skin is crispy.

Grill the asparagus for about 7-8 minutes, turning occasionally, until they are tender and have grill marks.

Meanwhile, bring 120 ml of water to a boil in a small pot. Add a pinch of salt and 1 teaspoon of olive oil, then stir in the 80 g of dry couscous. Cover and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

Once everything is cooked, plate the couscous, and top it with the grilled sea bass and asparagus. Garnish with fresh herbs and a wedge of lemon.
