Crack the eggs into a medium bowl. Add a pinch of salt and pepper, then whisk until well blended.
Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Add the diced onions and cook for 2 minutes until translucent.
Add the diced mixed bell peppers to the pan and continue to cook for another 3 minutes until they start to soften.
Add the spinach to the pan and cook for 1-2 minutes until wilted. Remove the vegetables from the pan and set aside.
Add another tablespoon of olive oil to the same pan. Pour in the whisked eggs and let them cook for about 2 minutes until the edges start to set.
Add the cooked vegetables evenly over one half of the eggs.
Once the eggs are mostly set, carefully fold the omelette in half using a spatula and cook for another 1-2 minutes, until fully set.
Meanwhile, toast the whole grain bread slices in a toaster until golden brown.
Serve the vegetable omelette hot with the toasted bread on the side.
