Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
While the pasta is cooking, slice the chicken breasts into thin strips. Season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-7 minutes until golden and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, lower the heat to medium and add minced garlic. Sauté for 1 minute until fragrant.
Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese, and let the sauce cook for about 3 minutes until it thickens slightly.
Return the cooked chicken to the skillet and toss to coat with the sauce. Add the cooked pasta and toss everything together until well combined. Add reserved pasta water if the sauce is too thick.
Season with additional salt and pepper to taste. If desired, serve with a sprinkle of fresh chopped parsley.
