Finely chop the scallions, separating the white and green parts.
In a bowl, whisk together the eggs, white miso paste, salt, and black pepper until well combined.
Heat a teaspoon of sesame oil in a non-stick pan over medium heat. Add the white parts of the scallions and sauté for about 1 minute until fragrant.
Pour the egg mixture into the pan. Gently stir with a spatula as the eggs begin to set, cooking until they are softly scrambled.
Toast the slice of whole grain bread until it reaches your preferred level of crispiness. You can add a teaspoon of butter on top if desired.
Once the eggs are cooked to your preference, remove them from the heat.
Place the scrambled eggs on top of the toasted bread. Garnish with the green parts of the scallions for a fresh touch.
