Ingredients

  • 2 cups Rolled oats
  • 3 cups Low-sodium vegetable or chicken broth
  • 2 tbsp White miso paste
  • 6 large Eggs
  • 3 sliced Scallions
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 1 tbsp Toasted sesame seeds

Instructions

In a medium saucepan, bring 3 cups of low-sodium vegetable or chicken broth to a simmer over medium heat.

Stir in 2 cups of rolled oats. Reduce the heat to low and cook, stirring occasionally, until the oats are tender and have absorbed most of the liquid, about 15 minutes.

While the oats are cooking, bring a separate pot of water to a boil. Carefully add 6 eggs, and boil for exactly 7 minutes for soft-boiled eggs. Remove the eggs and place them in a bowl of ice water to cool.

Once the eggs are cool enough to handle, peel and set them aside.

Add 2 tablespoons of white miso paste to the cooked oats, and stir until fully incorporated. Taste and adjust seasoning with soy sauce if desired.

Drizzle 1 tablespoon of sesame oil over the oats and stir to combine.

Divide the savory miso oatmeal into 3 bowls. Slice each peeled egg in half and place two halves on each bowl of oatmeal.

Garnish each bowl with sliced scallions and sprinkle with toasted sesame seeds.
