Start by soft-boiling the eggs. Bring a pot of water to a boil, gently add the eggs, and boil for 6-7 minutes. Remove them and place them in a bowl of cold water or ice bath to stop cooking. Once cooled, peel the eggs and set aside.
In a large saucepan over medium heat, add the sesame oil. Once hot, add the rolled oats and toast for about 2-3 minutes, stirring constantly until they have a slight golden color and nutty aroma.
Add the low-sodium vegetable or chicken broth to the saucepan. Stir well and bring the mixture to a simmer.
Stir in the white miso paste until fully dissolved into the broth and oats mixture. Let it simmer on low heat for 10-15 minutes, stirring occasionally, until the oats are cooked and the mix has a thick, porridge-like consistency.
Once the oatmeal has reached your desired consistency, remove from heat. Stir in the soy sauce if using. Taste and adjust the seasoning with salt and black pepper as needed.
Divide the miso oatmeal into bowls. Top each serving with two soft-boiled eggs, sliced scallions, and a sprinkle of toasted sesame seeds.
