In a large bowl, whisk together the flour, baking powder, sugar, and salt.
In another bowl, beat the egg and then mix it with the milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy. Do not overmix.
Heat a large skillet or griddle over medium heat and coat with vegetable oil.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
Flip the pancakes and cook for another 2-3 minutes, or until they are golden brown and cooked through.
Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
