Preheat your grill or grill pan to medium-high heat. Season the chicken breasts with salt, pepper, and dried oregano on both sides.
Drizzle 1 tablespoon of olive oil over the seasoned chicken breasts to lightly coat them.
Place the chicken breasts on the hot grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the middle.
Remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.
Prepare the salad by arranging the mixed salad greens in a large bowl or on individual serving plates.
Top the salad greens with the cooked quinoa, halved cherry tomatoes, sliced cucumber, and crumbled feta cheese evenly distributed.
Add the grilled chicken strips on top of the salad. Drizzle with the lemon vinaigrette and an additional tablespoon of olive oil if desired.
Toss the salad lightly to combine all ingredients or leave it arranged beautifully before serving.
